Cherry Tomato Bocaditos

Another easy and fun recipe for Cinco de Mayo. The filled cherry tomatoes look really cute, and they have a perfect bite-size. But if you think that scooping and filling cherry tomatoes is too much work, you can use bigger tomatoes for the recipe.
Cherry Tomato Bocaditos
Ingredients:
Tomatoes:
- 10 smaller sized tomatoes, halved and scooped (save the pulp for the guacamole)
- 1 package thin bread sticks
Guacamole:
- 2 ripe avocados, halved and peeled
- 1 cup tomato pulp (from above)
- ½ cup finely minced onion
- 1 tablespoon freshly squeezed lime juice
- ½ teaspoon salt
- ¼ cup chopped cilantro
Directions:
1 - Cut tomatoes in half and scoop out pulp to form a tomato shell. Set the pulp aside in a small dish to use in the guacamole.
2 - Brush lime juice and olive oil inside the tomato shell, and allow to sit while preparing the guacamole.
3 - Peel avocados and mash them with a fork.
4 - Add remainder of ingredients and mix together.
5 - Scoop the guacamole into the tomato shells, and add a bread stick as a toothpick.
