Considered to be the first fusion food, Peruvian cuisine with seafood has been influenced by cuisines from almost 4 continents of the world and more specifically from Africa and Asia. Some of the important influences in Peruvian cuisine include Basque, Spanish, African, Japanese, Sino-Cantonese, and Italian.Peruvian cuisine is regional in nature. Coastal areas have lots of Chinese and African influences. Lima's seafood is the ultimate mix of Japanese, Chinese, African and European.
Peru offers some of the best in Latin food.
