Homemade Yogurt
I'm a longtime yogurt fan. At home we have fresh yogurt every day, made from bulgaros. The link I set of for this is the exact process we follow. It's quick and easy.
One thing, though: The longer you take to sift the living bacteria and separate your yogurt from it, the more acidic it will taste. We once left it for two days and I almost puckered myself blind when I tasted the outcome.
What are bulgaros exactly?
They're kefir grains...basically a bacteria and yeast colony that makes yogurt and does wonders for your digestive system.
Jocoque
Now I'm working on getting a good jocoque. This is a long-standing tradition in my father's home. For jocoque, instead of using bulgaros, you use soured milk as the bacterial source. Making jocoque takes more time, but the result is the stuff that dreams are made of.
Benefits?
Tons. Yogurt has probiotics (the good bacteria), and helps combat bacterial diarrhea, reduce food allergies, lower cholesterol, prevent UTI, and enhance your immune system... for starters.
